We came across an incredible popsicle whilst at a trade show one year and could not stop thinking about it. Mango Chia Seed Popsicles. The perfect spruce to any Spring or Summer day.

It was seriously the best ice cream I’d ever tasted. I had to try and replicate it at home.

I put chia seeds in everything. I put them in my pudding, on top of my yogurt and now wanted to try it to replicate a homemade mango chia popsicles.

Ingredients needed:

  1. 1 1/2 teaspoons of chia seeds
  2. 10 ounces of coconut water
  3. 2 large mangos, chopped

Directions:

  1. Soak the chia seeds in water for about 10 -15 minutes.
  2. Blend some ripe mangos with a bit your coconut water until pureed
  3. Throw the chia seeds in the mixture
  4. Pour your mixture into popsicle molds
  5. Freeze until frozen & enjoy!

You’ll have deliciously sweet mango popsicles with a fun twist of chia seeds in every bite. Your kids (and adults) will love these healthy yummy treats. Chia seeds has many amazing benefits such as protein, fiber, and magnesium. Dr. Dennis Goodman, the author of “Magnificent Magnesium” states:
